Six meals sit in Suyeong. Pork soup, a course table, seaweed broth, Jeju noodles, eel rice, and grilled pork. They do not add up to one afternoon.

The small rooms fill at lunch. A few kitchens stop taking orders in the late afternoon.

Pork soup rice stays clean instead of heavy. The mixed bowl has tender slices, a bit of head meat, and broth that is already salted. Radish kimchi cuts the last spoon. The room is small. Chairs sit close, so a solo bowl is easy and a long talk is not.

Seasonal greens keep the early plates light. Abalone liver is bitter until the yuja sauce clears it. Duck with myeongi is richer, sauce in layers, not one sweet glaze. Staff explain the plates without hurrying the table. Dessert can be odd. The Daejeo tomato finish is smooth.

Flounder seaweed soup is the bowl. Broth is deep and not fishy. The seaweed is soft, and there is enough fish that the stone bowl feels full. It comes too hot to start. Side dishes are neat, and refills get checked. Families fit. Service speeds up when the room is packed.

Jeongdeun noodles sit in a thick pork broth. House noodles stay chewy. Spicy garlic-stem pickles clean the finish. The portion is large enough that the free rice is extra. Cold pork slices have no smell. The room is plain, with a self bar, and it can run cold.

Hitsumabushi is the room. Freshwater eel stays firm, with grill char, and the tare is savory instead of sweet. Ochazuke broth resets the bowl halfway. Milk pudding is a mild close. The dining room is small and fills. Fine bones show up in some pieces.

Jirisan black pork ogyeopsal has clean fat and chew. Gabrisal and hangjeongsal snap more. Aged kimchi, jeon on holiday tables, noodles, doenjang stew, and fruit fill the table before the meat is gone. Yukhoe is soft and seasoned. Groups and kids fit. Baby chairs are out, and a room can be arranged.

Busan Seonok keeps the grill later than the soup rooms.
