Seven meals sit in Seomyeon. Pho, noodle hotpot, pork bone stew, grilled pork, nakgopsae, and beef soup. They do not add up to one afternoon.

Soup rooms stay open in the afternoon. Most grills start after four.

Rare brisket pho has a clear broth with real depth. Noodles stay soft and a bit chewy. Cilantro comes if asked, and cha gio is large and crisp. The room stays bright through dinner.

Gatbaldang puts one pot in the middle. Fish seaweed noodle hotpot stays mild. Flounder and seaweed sit in a warm broth.

Pork backbone stew has a deep broth, soft meat, and a pile of greens. The pot looks modest and then keeps going. Udon noodles come in the pot. A side of spicy bone soup is the sharper lunch. Rice balls sit next to the bones. The room is wide enough for a group.
